Adam Simha Knives is the return to a first love.
Adam Simha's love of craft, material, and design began early, in the culinary arts, and later expanded into the realm of metalwork. His original designs are based on his own professional kitchen experience, and more than 25 years of creating custom knives for working chefs and serious home cooks.
Servicing these knives exclusively over the years has given him intimate knowledge of every detail from material, blade shape and edge geometry to hardness, handles, and hardware. Each tiny improvement has been a hard won and profound lesson.
The act of making is a wonderful, moving, and humbling experience. A passion for creation has directed most of my life choices. As a child I was encouraged not only to notice but to care deeply about the relationships between all things surrounding me within any given context; for example, how a knife functions within the context of a particular user’s hand which in turn, functions within a kitchen…within a family…and ultimately within society. I believe that every knife I produce should be an enduring pleasure for its recipient and a stepping stone for me; each blade carries with it the epiphanies and lessons which brought it to life.
